Pure & simple apple cherry almond crumble
This crumble is 100% vegan, free from refined sugar and free from grains. It makes my house smell like cinamon apple pie heaven so it's lovely if you're having guests round (or just fancy a cheeky pie on your own, nothing wrong with that.)
I use ground almonds as the crumb which is a great source of protein and healthy fats. The fruit is sweetened with medjool dates but a good dollop of honey or maple syrup would also do the job if you can't get hold of medjool dates.
Ingredients
5 peeled cooking apples, medium chunks
Handful of dark pitted cherries, fresh or frozen
10 medjool dates, pitted and roughly chopped
500 grams almond flour /ground almonds
1 cup of coconut oil, softened
1 tablespoon of cinnamon + more for sprinkling
1 tablespoon quality vanilla extract
A glug of high grade pure maple syrup (about 3 tablespoons)
1 cup of water
Teaspoon quality sea salt
Method
In a deep saucepan, add the water, vanilla, cinnamon, dates & gently stew the apples and cherries in water for about 20 minutes or until the apples have softened down
Whilst your fruit is stewing, in a mixing bowl get your almond flour, softened coconut oil , sea salt and maple syrup and stir until the consistency is similar to that of stickybreadcrumbs
Pour the stewed fruit into a pie dish, let it cool for about 10 minutes then top with the crumble
Finish with a sprinkling of cinnamon and maybe some dark muscavado sugar forbit of caramelised crunch
Whack into the oven at 180 for about 15 minutes or until golden brown on top
Serve with masses of hot steamy custard.. or whatever floats your boat.
