Green Dream Soup
This soup is so quick to make and and is packed with iron & mineral rich leafy greens. It's great for when you're feeling a bit under the weather and need some comfort and nourishment. It can be made in a big batch and frozen in freezer bags for convenience.
Ingredients
1 red or white onion, roughly chopped
2 cloves of garlic (bashed)
2 carrots, grated
5 cubes of frozen spinach (or a few handfuls of fresh)
Cup of frozen garden peas or petit pois
Cup of broccoli, frozen or fresh
Cup of shredded savoy cabbage, frozen or fresh
Veg stock cube
Salt & pepper
Heaped teaspoon dried Italian herbs
Pinch of rosemary
Large tablespoon Milled linseed/flax **
Method
Soften the onions in a deep saucepan with a glug of good oil. I use rapeseed because of its high burning point
Add the carrots and garlic
Once that's all softened, add the rest of the veg, stock and herbs and then top with boiling water so it's just covering everything
Cover and simmer for 15 minutes
Take off the heat, blend with a hand blender or standing blender
Give it a taste and add salt and pepper to your liking. I like to put some crumbly cheese like feta on top but it would be lovely with some yoghurt or mixed seeds.

** I use milled flax/linseed to thicken the soup and also for some added good fat and omega 3. You can get milled flax in most supermarkets **
