Super quick creamy vegan mushroom pasta
Im really enjoying exploring vegan alternatives recently. I've stopped eating eggs, milk, and meat including fish. The one thing I'm struggling with is cheese. Maybe one day....
Anyway this pasta dish is so gorgeous and simple. I just whack whatever greens I have in the fridge in there for some extra goodness but I find spinach and kale work especially well. Have a play around and find what works for you :D
Ingredients
1 small red onion, roughly diced
3 portobello mushrooms (or whatever mushys you have) , torn into bite sized bits
Organic brown rice spaghetti (or other spaghetti )
1 heaped tsp smoked paprika
1/2 tsp English mustard
handful chopped flat leaf parsley
1/2 tub creme fraiche
1 cup baby spinach
salt and and pepper to serve
method
Put pasta on to boil in salted water (approx 10mins)
In the meantime ...
In a medium frying pan soften to onion in some oil until soft and starting to brown
Add the mushrooms along with a pinch of salt. Cook for 10 minutes or until the mushrooms have shrunk and released some moisture
Add the creme fraiche , mustard and paprika, turn heat down to low
Drain the pasta
Add parsley and spinach to the mushrooms and spoon on top of the spaghetti
Garnish with a sprig of parsley
