Spiced sweet potato scones served warm with raw honey and cinnamon.
I'm calling them scones because they have a similar consistency although they are made with very different ingredients. I love the gentle heat and sweetness from the cinnamon and cloves. They are gorgeous grilled with some butter and honey for a sweet and comforting afternoon treat.
Ingredients
2 sweet potatoes
1 cup coconut flour
half cup coconut oil, melted
1 cup almond milk or your milk of choice
1 egg
1 tablespoon pure maple syrup
1 teaspoon allspice
1 teaspoon ground cloves
1 tablespoon cinnamon
1 tsp baking powder
1 tsp psyllium husk powder
1 tablespoon quality vanilla extract
1 pinch sea salt
Method
Mix all dry ingredients in a bowl
pop the egg, water, oil, maple syrup & vanilla in a blender and blend until its a smooth consistency.
Pour the wet ingredients into the dry and stir until all the moisture has been absorbed. If its looking crumbly you may need to add a little more milk or water.
Knead the mixture to ensure consistency, then roll into individual fist sized balls.
Drizzle some maple syrup on top and sprinkle some mixed seeds
Bake at 150 degrees C until golden brown.
Leave to cool and store in an air tight container.
