Vegan Chunky Chocolate Soup with Oats and Coconut

I know chocolate soup sounds a bit wrong, but this creamy thick and warming soupy delight is the ultimate comforting treat. I like to drink it from a big mug and then spoon out the oaty coconut-y bits at the end. HEAVEN. 

Ingredients 

Heaped tablespoon raw cacao

1 cup coconut milk OR cashew milk. Any creamy milk alternative. Macadamia milk would probably work too.

1 teaspoon nut butter of choice. I use peanut butter

1 teaspoon dessicated coconut

1 teaspoon rolled oats

1 teaspoon mixed seeds

1 teaspoon raw honey

 

In a saucepan add all of the ingredients and very gently heat for about 10 minutes. Do not let this boil, just keep it on a soft simmer stirring regularly to avoid bits sticking to the pan. If its feeling a little thick then you can always add hot water to adjust to your liking.

Serve in a giant mug, sprinkle with dessicated coconut & raw cacao nibs and sink into chocolate soup bliss.
