Breakfast miso for savoury lovers
This bowl of delicious savoury goodness is my go to breakfast when I don't fancy anything sweet. The oats may sound a bit odd, but they add a nice comforting carby bite to the broth and are packed with minerals and fibre.
I use unpasteurised fermented miso paste. It's a little pricey but a big jar keeps for ages in my fridge so I can just spoon it out as and when I need.
The egg gives a protein and omega 3 punch, the spinach (frozen stuff) is high in phytonutrients and many vitamins and minerals including B6 and the baby sprouts again high in nutrients and give extra bite.
All of the veg I use in this recipe is frozen as I'm living on a budget, but feel free to use fresh!
Ingredients
1 egg (I pre boil a few eggs at the start of the week so I can use as and when I need)
1 large tablespoon good quality mail paste
250ml boiling water
2 cubes frozen spinach
2 broccoli florets
a few Brussels sprouts
small handful rolled oats
In a small saucepan, add all of the veg and simmer for about 6 minutes or until the brocc is tender. Add the dollop of miso and the oats, stir and take off the heat.
serve in a nice deep bowl, top with egg and maybe some coriander.
