Smokey Spanish chickpea stew
This hearty healthy stew is rich, comforting and incredibly easy to make. This whole meal costs about £3 and Serves two people for two days or 4 big servings. Proper cheap, super filling and is even better the next day. Swap the egg for some tofu or some falafel and you've got yourself a heart vegan meal.
Ingredients
1 red onion - 1/2 sliced, 1/2 mined
3 cloves garlic, minced
1 roasted red pepper or jar of pre roasted red peppers
1 tin chickpeas
1 tin lentils
1 x 500ml carton passata
1 vegetable stock cube
1 heaped teaspoon smoked paprika
1 small teaspoon hot chilli powder
oil, preferably olive oil
fresh flat leave parsley and coriander to garnish
In a large, heavy pan heat some oil and fry the sliced onions until starting to caramelise , about 5 minutes
add the peppers,minced garlic and onion and soften for a couple of minutes ensuring you don't burn the garlic
add the paprika, chilli powder, stock cube , passata and top up with 200ml of boiling water
simmer for about 20 minutes, allowing the sauce to reduce
once the sauce has reduced and is looking rich, taste it and season accordingly
add the lentils and chickpeas and gently simmer for another 10 minutes, adding water if you think it's becoming too thick.
fry an egg
spoon into a big bowl, top with the egg and the fresh herbs and a good helping of fresh black pepper.
