Vanilla Bean Date Paste
This is incredible dolloped on top of porridge instead of honey or sugar. Even better is that there is just two ingredients. Dates and vanilla.
Ingredients -
10 pitted Medjool dates - Medjool dates are the best type to use for their delicious, toffee like flavour
1 vanilla pod or 1 teaspoon quality vanilla extract
half cup warm water
Mini food processor or a blender would probably work just as well
Add everything into your food processor and blend until a thick, smooth and cream paste is formed.
Keep in a preserve jar in the fridge and it will keep for ages.

Vegan Cashew Curry
Can I just say, this is the first time I've cooked cooked cashews for this long in a curry and WOW. When soaked in curry sauce over time they become plump, soft and tender. So satisfying to bite into! Anyway cashew rant over.
This curry is really versatile. If you have a nut allergy or just don't fancy cashews, skip the cashews. If you eat meat, add some meat. But in my humble opinion, this curry is absolutely perfect as it is. Creamy, comforting, and gently spiced. Its like a nurturing hug in bowl...or plate.
